1 lb. ground chicken
1 can chicken broth
4 medium potatoes, peeled and cubed
2 medium onions, thinly sliced
1 cup frozen green beans
1 cup frozen corn
1 (28 oz.) can Italian style diced tomatoes, undrained
1/4 cup butter
1/2 cup crushed crackers
garlic salt, cayenne, pepper, etc to taste
Place the chicken, potatoes, onions and chicken broth in a large casserole dish and season. Cook covered at about 375° in the oven until potatoes are tender. Remove from oven, and mix in remaining ingredients and cook covered for about 30 minutes at 350°. If you find it has too much liquid, just cook it uncovered for a while until it cooks down a bit.
