Turkey Empanadas

Equal amounts of chopped up cooked chicken or turkey and grated cheddar or jack cheese
2 or 3 cans diced green chiles, to taste
5 cups flour
1 1/4 cups cornmeal
2 1/2 tsp. salt
1 1/3 cups plus 3 T. shortening
1/4 cup water

For the pastry pocket, combine flour, cornmeal, and salt. Cut in shortening. Sprinkle with water. Stir with a fork until a dough forms. Roll the dough out; cut in large circles. Spoon some filling on one side of the circle, fold the other half over, moisten edges, and crimp all around the edge with a fork. Put them on a pan, brush with milk, sprinkle with cornmeal for added crunch.

Bake at 400° for 25 minutes or until golden brown.
